75g organic sugar
1 tsp natural vanilla essence
1 1/2 cups of organic flour
1 1/2 tsp of baking powder
2 Tbsp sugar (or more if necessary)
Turn oven on to 180 degrees Celsius. Line tray with baking paper.
Cream butter and sugar, adding vanilla essence and egg when fluffy. Sift in the flour and baking powder and mix till combined.
Place the additional sugar into a bowl to use for rolling the biscuits in. Take tablespoonfuls of mixture and roll into the size of your little finger, roll into the sugar and place on the tray.
Bake for about 15 minutes until golden. Leave to set on the tray, then place on a rack to cool. Store in an airtight container for up to 7 days.
I usually get around 30 biscuits.
This time round I played to see what they taste like in other flavours.
Cranberry - Add 1/2 cup of chopped cranberries with adding the flour.
Chocolate - Replace 1/4 cup of flour with 1/4 cup of cocoa.
Chocolate Chip - Add half a cup of small chocolate chips. I didn't roll in sugar thinking the chocolate helped with the sweetness.
